Help me understand tipping

I really hope to learn, especially from anyone that works somewhere that they expect tips.

We went to a restaurant and the bill was $45. The waiter did a lot of work, bringing napkins, drink refills, and go plates. So I left him a $10 tip, which is about 22%.

Then we went to a store. I picked out a few things and took it to the register, where the guy rang us up for about $60. He scanned my card, then flipped the machine around where it asked for a 15%, 20%, or 25% tip! In front of the guy, I had to select "no tip" and spin it back around to him.

Then we went to get some coffees. We go up to the counter and place the order, and the girl ringing us up flips the machine around to ask for a tip. Since she's messing with my food I felt obligated to give her a 20%. All she does from there is make our drinks and yell out our names to come get them.

I know that the waiter gets $2.13 a hour, while the guy at the store and the girl at the coffee shop gets at least $7.25.

How is it justified? Why does the store clerk and coffee shop girl think that they deserve the same tip (or more) than the waiter that did a lot of running back and forth?
